Chocolate as its own Food Group?


Chocolate can be used in so many great dishes and has so many healthful benefits! Whether you choose a rich dark chocolate or a creamy sweet milk chocolate there are nutritional benefits. Below is the top 10 reasons to have chocolate in your daily diet.

1. High in Antioxidants - Cocoa contains flavanols, a type of flavanoid that is only found in cocoa and chocolate. Flavanoids are naturally-occurring compounds that occur in plant foods that act as antioxidants and help counteract free radicals in the body.

2. Blood Pressure Benefits - Dark chocolate has been shown in studies to lower blood pressure in people with elevated blood pressure.

3. Lower LDL Cholesterol - Eating dark chocolate on a regular basis has been shown to reduce LDL cholesterol by as much as 10 percent.

4. Natural Anti-Depressant - Chocolate contains serotonin, a natural anti-depressant. Chocolate also stimulates endorphin production, which creates feelings of happiness and pleasure. In fact, one study found that melting chocolate in the mouth produced feelings of pleasure longer than passionate kissing. This may explain why many people naturally reach for chocolate when they're depressed.

5. Cancer Fighter
Several studies have found chocolate to be one of the best cancer-fighting foods along with foods like red wine, blueberries, garlic, and tea. Two ways that chocolate works as a cancer fighter is by inhibiting cell division and reducing inflammation, though research is ongoing and will probably find additional ways in which chocolate fights cancer.

6. Prevents Tooth Decay - Research has found that the theobromine in chocolate prevents tooth decay by eliminating streptococcus mutans, a bacteria found in the oral cavity that contributes to tooth decay.

7. Longer Life and Less Disease - One Dutch study followed 200 men over 20 years and found that those who consumed large amounts of chocolate, both milk chocolate and dark, lived longer and had lower overall disease rates than men who ate little or no chocolate.

To further strengthen the case for dark chocolate as a life extender, the world's longest-lived person, Jeanne Louise Calment, lived to the age of 122 and many ascribed her longevity in part to her consumption of 2.5 pounds of dark chocolate a week.

8. High in Magnesium - Cacao is higher in magnesium than any other plant. Magnesium is an important mineral that helps in the regulation of the digestive, neurological, and cardiovascular systems. Since many people are magnesium deficient, adding magnesium-rich dark chocolate to the diet can improve overall health.

9. Artery Cleanup - Studies have shown that the antioxidants in cacao work like brooms in sweeping plaque out of the arteries.

10. Brain Health - Many studies have shown that dark chocolate is good for the brain. Researchers at Johns Hopkins University found that it can protect the brain after a stroke by shielding the nerve cells from further damage. Dark chocolate has also been found to improve memory.

Crockpot Mania

Dinner in a Dash, 30-Minute Meals, Grab and Go or Carry Out or Drive Thru! Everyone is looking for a way to keep dinner wholesome and nutritious for their families and do it in a way that does not take a culinary degree or hours of prep and attention!

Bringing back family dining should not be the worst thing on your TO DO list. Let me see if I can help you with making dinner and family dining fun!

Crockpots are all the rage and why not! Slowcookers can make your dinner easy to make in one pot, takes less expensive cuts of meat and turns them into tender and moist entrees. By using a slow cooking method many dishes that are generally thought of “as better when reheated” the Crockpot does this the first time. Long slow cooking, can be done while you are at work or on the run. Comfort foods, pulled pork, roasted chicken and stuffing and yes Mac and cheese! 

If you are familiar with Crockpots from the 70’s and 80’s you will be really surprised when you visit sites such as The Crockpot Blog (You will really enjoy the Island Pork, I served this with baked sweet potatoes) OR this great Overnight Oatmeal recipe-- you will not believe how great oatmeal can really taste!
I have used a crockpot for years to keep hot mulled cider, warm applebutter for biscuits, and large amount of Rotel (the Rotel tomato and chilies mixture with processed cheese) or nacho cheese with processed cheese, chili with beans and any condiments you wish to add such as onion, garlic, jalapeƱo, chips etc.

I have also tried a wonderful chilies chicken with chicken breasts, tomato and chilies mixture and spices. Cook for 4 hours and then shred and serve over tortillas. Add cheese and sour cream. I am getting more adventurous and really enjoying the crockpot for many meals.

Indiana Pork Farmers Present Rib America Festival



Indiana pork farmers are proud to host one of the most popular outdoor events in Indianapolis – the Rib America Festival!  Indy’s original music and BBQ festival is scheduled for this weekend, September 2-5, at White River State Park. 

Who’s playing you ask?  None other than the Doobie Brothers, KC & the Sunshine Band, REO Speedwagon and many more!  Plus, you’ll get to try great BBQ ribs from some of the best grillers in the business.

So come on down to Indianapolis and celebrate the end of summer (and the three day weekend) with Indiana’s pork farmers!


Admission into the 16th Annual Rib America Festival is FREE before 5:00 PM on Friday, and 2:00 PM on Saturday, Sunday, and Monday.


$7.00 General Admission (which includes the concerts) will be collected at all entrance gates after 5:00 PM on Friday and after 2:00 PM Saturday, Sunday, and Monday.

The folks at Dig IN invite you to "join us on August 28th as dozens of Indiana chefs, farmers, brewers, wineries and artisans descend on White River State Park to celebrate all things Indiana food! Sample dozens of signature dishes made from local product by world-class chefs. Listen to leaders in the Indiana food community speak about food issues. Then, chill in the shade to the tunes of local music acts."

Come visit Indiana's Family of Farmers at Dig IN on August 28, noon- 5 PM at White River State Park.

Dairy Bar, Cattle Barn and Cheeselady- Oh My!

Can you believe the State Fair is only four weeks away!  I am so excited to tell you what the American Dairy Association is doing to begin the celebration!  To start the Dairy Bar wants to give away 10  pairs of tickets to the Dairy Bar.  Each pair of tickets would be a coupon for a ‘Fuel Up to Play 60 Kids Meal and a Shake and Sandwich coupon.  Learn how to enter later in the post.


Visit the fair during the 13-17th and see the real dairy farmers and cows.  See how the animals are cared for and actually pet a calf and receive a coupon for a glass of milk in the Cattle Barn.  Walk along and visit the exhibits in Our Land Pavilion and have an opportunity to step back in time to see how milk was delivered in the early ‘30’s, see the old timey posters of milk promotions and follow the carbon foot print of dairy farming since the late ‘30’s. Visit Sarah Kaufmann, aka the Cheeselady, and see what she is carving this year to help celebrate the 80 years of Dairy & Nutrition Council delivering the facts and fun of the dairy industry in Indiana.  

Mark your calendar for August 10, when we unveil the sculpture for the fair goers to see.  There will be cooking demos using assorted dairy products and featuring Ivy Tech student who actually developed lactose free recipes for consumers who have difficult time drinking milk.  For the kids on the 7th and 14th we will host the Shake it Up with Dairy demo giving kids the opportunity to drink a new dairy product and meet Buttercup in person

Are you ready for a snack? Stop by the Dairy Bar and enjoy a gooey and creamy grilled cheese, a delicious shake or a dish of hand scooped ice cream!  To enter to win the coupons tell us just one of the five cheeses used at the dairy bar. BEANGO!

Hey there!
When it comes to the State Fair, you can’t beat all the unique food and fun flavors! Did you know that this year, there is a way you can get free food at the Indiana State Fair and have fun while doing it?  That’s right!
This year at the Indiana State Fair, you can play BEANGO!  Eight larger-than-life soybeans will be on display all around the fairgrounds.  The giant soybeans will include everything from a farmer, to a pig to a chicken! 
While on the grounds, you can play a game by visiting each of these big beans, answering questions and getting BEANGO!  Get three facts correct in a row on the BeanGo card and come back to the Indiana Soybean exhibit in the Pioneer Our Land Pavilion for a coupon for a free pork burger, milkshake, or an all-beef hotdog. (Did you know that most of the soybeans raised in Indiana go to feed livestock, like pigs, chickens and cows?)  If you complete the Beango game card, we will have an extra special prize for you!
The free BeanGo cards will be available through an app on both iPhone and Android as well as a game card that you can find in the State Fair program or at our exhibit. You can also look for the game card in the state fair program.    As you walk around the fair, be on the lookout for these soybeans.  They are your ticket to free food. 
Look for soybeans all over the fair, and look for me at our booth in the Pioneer Our Land Pavilion.  I hope to see you there!

Arts and Innovation = Opportunity for Indiana

Indiana Artisan is an independent organization that supports entrepreneurs who create high-quality art, crafts and value-added foods in the Hoosier state. It was originally launched in 2008 as a comprehensive program of the Indiana Office of Tourism Development, the Indiana Office of Community and Rural Affairs, the Indiana Arts Commission and the Indiana State Department of Agriculture.

Who is an Indiana Artisan?

An Indiana Artisan is a Hoosier recognized for careful attention to detail, knowledge of a craft and an entrepreneurial spirit. Their extraordinary talent contributes to Indiana's reputation for quality work.
They produce anything from specialty cheeses, handmade stoneware, honey and honey-based products, wood arts, wines, jewelry and even—the finest high-quality maple syrup.

Take an Artisan Adventure this weekend to the National Maple Syrup Festival in Medora, Indiana and you will be able to taste the exquisite maple syrup of Indiana Artisan, Tim Burton.

Tim and his wife Angie host the Festival and invited other artisans. These include:
 Jason Emmons, one of the top four chainsaw carvers in the United States chosen by Echo Outdoor Power Equipment to make up the national carving team in 2005. Thomas Wintczak a potter from Posey County who has studied the work of potters from the 18th and 19th centuries yet does not do reproductions. And the Founder of Chocolate for the Spirit, Julie Bolejack, who not only uses the best ingredients from around the world but achieved her professional chocolatier certification in 2008 from the esteemed Ecole Chocolat out of Vancouver, Canada.
